Hello, where are the controls (I'm assuming css info) for changing the default sizes of the font displaying INSIDE CMS admin? Thanks in advance!

Yes, you can edit the styles here:
/3rdParty/SimplaAdmin/css/style.css
Make a change log and/or backup your edited style.css file so when upgrading in the future, those styles can be re-applied if needed.
