Templates for AM 2.16

Ok so I took over a site that uses AM 2.16 and the client wants to create a consultant page and include it in the site. So I've done some research and it looks like between category and templates I could possibly do this. My question is once the category is created and the template, how do you enter the data per page? Also is this the direction or am I missing anything? Just point me to the documentation or examples and I'll take it from there (hopefully).
