AM2 Chinese Chars support

It's looks very difficult to handle Chinese when I'm using MySQL as database. I can change Chars set to GB2312 for every page. But Admin page still need to manually chnage Encoding from browser's menu. :( Also when I addedd one more upload field called 'Image Garelly', Chinese Chars seems been converted to UTF-8, but Even I changed to UTF-8 Chars, it still not shows correctly, Please help.
