Hi Andy,
Yes, you can add as many as you want -- we pre-set it to 5, but to add more...
First, log into Article Manager and click "Admin". Then go to the Database Editor, and click "edit table & fields" for the "Articles" database.
Then, add a new field. You'll want to name it "category#Num" where "#" is the next sequential number (ie, category6Num, category7Num)
Under "Field Type", choose "Custom", then "Article Editor: Secondary Category".
As an example, you can click modify on any of the existing category#Num fields to see how they look, and just duplicate those. :)
